As a side note, the Neil Perry-designed inflight's aren't that bad. But I'm a sucker for airline food - not the tastes, necessarily, but the way everything comes packed down in cute, neat little containers - the economy of space, the single serve pats of butter (thanks, Palahniuk) and, most of all, the novelty.

I've only eaten at one of them on the top 50 list, Chez Panisse, and that was only in their cafe for lunch. Claus Meyer's restaurant Noma made it on the list this year. Since it's in Copenhagen, it's a possiblity. Any WGB'ers want to come visit? I know it's the wrong thread but I'm now drinking Camille tea with honey because I have a sore throat. |

Yes, I poach a damn fine egg. The trick is to coddle the egg for thirty seconds or so before you crack it, swirl the barely simmering water (which has a bit of vinegar in it) pour the egg slowly from a jug or teacup into the vortex, turn up the heat a little, so that the bubbles that form on the bottom of the pan gently lift the egg up and prevent it from sticking.
