Best way's by hand, or if you must have it lump-free, with a potato ricer.

Bagels are not supposed to be "dense" - they are supposed to be moist with a semi-dense outer coating.

As far as taste, they are supposed to be EATEN with something, like most bread-like products.

Or are your referring to packaged bagels or the kind you get in most coffee shops in the Americas?

I'm glad someone else in the world feels the same way about bagels. Dense is the exact right description.
And no, cream cheese and lox doesn't help.

Bagel crisps are ok, though. With cream cheese and lox
